Recipe – Loaded Potato Rosti

Ingredients

6 large potatoes, peeled and grated
1 large onion, coarsely grated
100g butter, melted
100g cheddar cheese, grated
1 tsp salt
Freshly ground black pepper
2 chorizo sausages, coarsely chopped
1 avocado, peeled and sliced
4 eggs

Directions

Step 1 – Place the grated potato and onion into a colander or into a clean tea towel. Squeeze as much moisture as possible out of the mixture then place into a large bowl. Add the melted butter, grated cheese and salt and pepper and mix well. Divide the mixture into 8 portions and set aside.

Step 2 – Heat your barbecue to medium heat (180 – 200°C). Set up the BBQ with a hotplate or BBQ safe frying pan. Once the BBQ has reached temperature, add the chorizo and cook until caramelised, then remove from the BBQ and set aside.

Step 3 – Coat the hotplate or frying pan liberally with vegetable oil and add the rosti to the BBQ, pressing down to form patties, cooking in batches if necessary. Cook until golden on each side, then set aside to keep warm.  Fry the eggs until cooked to your liking.

Step 4 – Serve the rosti with the fried chorizo, top with a fried egg and slices of avocado.
