Recipe – Jammy Soy Maple Glazed Chicken

Ingredients

  • 1kg chicken wings and drumsticks
  • 1 tsp Chinese five spice
  • 1 tsp onion powder
  • 2 tbsp maple syrup
  • 2 tbsp soy sauce
  • 1 tsp fresh ginger, grated
  • 4 cloves garlic, finely chopped
  • 1 tbsp dark jam (plum or blackberry)

Directions:

Step 1 – Remove the chicken pieces from the fridge and set aside for 30 minutes. Meanwhile mix the remaining ingredients in a small saucepan and bring to a simmer for 5 minutes. Set aside to cool.

Step 2 – Toss the chicken pieces in the glaze to coat evenly.

Step 3 – Heat the BBQ to medium heat (180 – 200°C) with two zone heat. Ensure the grills are clean. If you are using a charcoal grill, keep at least half of the charcoal grate clear of briquettes or charcoal as a zone of indirect heat. If you are using a gas BBQ, light a burner on one side of the BBQ only. If you are using a Weber Q, have a trivet and convection tray in place.

Step 4 – Place the chicken pieces into the BBQ, away from direct heat, reserving any leftover glaze. Cook the chicken for around 20 minutes, turning at least once, until the chicken is almost cooked through. Brush the chicken pieces with remaining glaze and cook for another 5 minutes or until the glaze has caramelised and all of the chicken pieces have reached an internal temperature of at least 72°C.

Step 5 – Serve immediately.
