Recipe – Grilled Mortadella Skewers
Ingredients
- For the Pesto
- 1/2 bunch fresh parsley
- 1 or 2 green chillies (or to taste), deseeded
- 1/2 cup shredded parmesan cheese
- 1/2 cup pepitas
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup extra virgin olive oil
- For the Skewers
- 200g sliced mortadella (approx. 1mm thick)
- 3 large mozzarella balls
Directions:
Step 1 – If you are using wooden skewers, soak them in water for 30 minutes to prevent burning. To make the pesto, add the parsley, chillies, parmesan cheese, pepitas, salt and pepper to a blender and process until finely chopped. Gradually drizzle in the olive oil until a smooth paste is formed. Set aside.
Step 2 – Cut the mortadella slices in half, wrap a large teaspoon size ball of mozzarella in a mortadella slice and thread onto a skewer. Repeat so that there are three pieces of mortadella on each skewer.
Step 3 – Heat the BBQ to medium heat (180 – 200°C), ensuring the grills are clean.
Step 4 – Brush each skewer with a little oil and place onto the hot grill, turning regularly until the mortadella is starting to char and the mozzarella is melting slightly.
Step 5 – Serve warm on a platter, topped with the pesto.
