Recipe – BBQ Maple Pecan Brussels Sprouts
Ingredients
| 1 kg Brussels Sprouts, halved, stalk and outer leaves trimmed |
| 6 slices middle bacon, rind removed (omit for a vegetarian dish) |
| 1 cup pecan nuts |
| 1 tsp smoked paprika |
| 1/2 tsp salt |
| 2 tbsp melted butter |
| 1 tbsp maple syrup |
Directions
Step 1 – Prepare the BBQ for direct cooking over medium heat (180°C) with a hotplate or stainless steel grill pan in place.
Step 2 – Cook the bacon until well done (if using), then chop coarsely and and set aside. Toast the pecan nuts until just starting to colour, then then chop coarsely and set aside.
Step 3 – Toss the Brussels Sprouts in a little olive oil along with the paprika and salt. Add to the hotplate or grill pan and allow to cook with the BBQ lid closed. Toss the Brussels Sprouts regularly to ensure even cooking, allowing them to char.
Step 4 – Once cooked through, pour over the combined melted butter and maple syrup, add the bacon and pecans, stir to combine then remove from the BBQ and serve immediately.
